Spinach salad with Mandarin Orange slices
Products Used: Blood Orange EVOO , Lemon White Balsamic Vinegar
Ingredients for the salad:
- 6oz Baby Spinach
- 1/2 red onion sliced
- 1/2 c Pine Nuts (any choice of nuts will do)
- 1/2 pint cherry tomatoes slice in half
- 2 mandarin oranges peeled and separated into slices
For the Dressing:
- 4 T Blood Orange Extra Virgin Olive Oil
- 2 T Lemon White Balsamic Vinegar (or more to taste)
- 2 T freshly squeezed lemon juice
- 2 t Dijon Mustard
- Salt and Pepper to taste
To prepare the vinaigrette, place the mustard & vinegar in a small bowl and whisk together. Slowly whisk in the oil, then season to taste with salt and pepper.
Place spinach in a large bowl and toss with the vinaigrette. Add the onion, nuts, tomatoes and oranges and toss again.
